Anti-Inflammatory Chia Pudding Recipe

When it comes to managing inflammation, food can play a very important role. They can help decrease inflammation such as antioxidants, vitamins, and minerals. However foods that are highly processed, contain toxic ingredients and contain sugar can cause inflammation. 

Starting your day with food that can fight inflammation can be quicker (and easier) than you might expect. This simple breakfast takes 10 minutes or less, and contains some of the best anti-inflammatory foods like chia seeds, rich antioxidants and more.

INGREDIENTS: 

(makes 3-4 servings)

  • 10 tbsp coconut cream (equal to one 5.4 oz can)
  • 2 servings vanilla protein powder
  • 2 c unsweetened almond milk
  • 1/2 tsp vanilla extract
  • 1/2 c chia seeds

For the Topping:

  • 1 c frozen mixed berries
  • 1/2 c unsweetened almond milk
  • 1/2 c water
  • Optional tbsp coconut flakes

 

DIRECTIONS: 

  1. Place all ingredients, except the toppings in a high-powered blender and blend until smooth.
  2. Cover and chill in the fridge for at least 4 hours so it can thicken
  3. Pour into individual portions, add any toppings you desire, and serve chilled.
